HAPPY PANCAKE DAY! Truly one of the most noble days of the year. I remember finding out that Shrove Tuesday was called ‘Mardi Gras’ in French, which translates to ‘FAT TUESDAY’, and feeling like that was the most glorious name for a day ever. So with that in mind, here’s my fairly healthy pancake recipe. In honour of Fat Tuesday, this dish features good fats, like the cashew nuts!
I added a scoop of cashew butter into my pancake mix as well as for a topping, because I wasn’t particularly sold on the two ingredient egg/banana pancakes everyone’s been raving about. I mean, they’re perfectly fine – but fine in a ‘wow, these are two ingredients, they actually taste alright for a healthy pancake’. I don’t want something that just tastes ‘ok for a healthy alternative’. Nope, these are delicious in their own right. The cashew butter fluffs everything up, and there’s no need for syrups when you’ve got pomegranate.

1 ripe banana
1 egg, room temp
1/2 tbsp cashew butter
1 tsp cashew butter
Spoonful Greek yogurt (optional)
Sprinkle coconut palm sugar, if desired
1. Mash the banana together with the cashew butter, and whisk in the egg
2. Heat the coconut oil, spoon three dollops of mixture in and cook for a couple of minutes on either side, until golden brown
3, Add toppings as desired. EASY!
To top off my Sussex-y weekend (read part one here), I spent the morning in the greenhouse re-potting my seedlings. This is the stage where you wonder why on earth you’re reading my blog, and why someone under the age of 50 is willingly spending weekends wrist deep in soil.
Bear with me, though. Really, it’s about balance. The past two months of working in London have brought with them many late nights, stupid cocktails, hectic weekends. I love going out, but I try to be sensible. The last thing I want to do is to burn myself out and have it impact at all on my job.
So the past two weekends have been entirely home centric, and it’s done me a lot of good. If you don’t garden or grow things (snigger), you really should start. I probably sound like an utter lameo, but there’s something undeniably awesome about seeing a tiny seed turn into a whole plant! Perching in a warm greenhouse with rain lashing the windows was a wonderful way to spend a Sunday morning.
I tend to be drawn to growing herbs, fruit, veg and wildflowers. Mainly fruit and veg, because HELLO, food! Also, check my old lady jacket:
Spending a morning potting up my tiny seedlings which I’ve grown from scratch was hugely pleasing – I re potted calendula, dill and rocket, and planted a strawberry plant.
As ever, the most difficult part was getting my wellies off…
So, I haven’t posted about my vegan challenge in a couple of days, have I?
Bet you thought I’d given up, right? Wrong! I’ve been having such a great time and enjoying myself so much that I decided to set up a new blog, publishing my vegan recipes. I’m enjoying cooking such an insane amount that I keep wanting to post loads on here, but I don’t want to annoy anyone following my blog as I feel it’d be too much of a change of direction. So I’ll be keeping up this blog for my usual ramblings and sillyness, and my new blog will specifically be for vegan stuff. So, it’s nouvellevegan.wordpress.com
I hope you feel inclined to go and check it out. Essentially, it’s for food lovers who just happen to be vegan. I’ve talked on here before about how many vegan recipes I’ve found tend to either be wildly unhealthy/calorific because they’re making up for the lack of certain ingredients, or be very healthy but not particularly yummy to eat. This site is where I’ll be posting my own recipes that fall somewhere between those two camps.
I’m not trying to convert anyone or preach at anyone. It’s a personal choice, and I’ve found that my body just seems to function better on a vegan, sugar free, gluten free diet. The changes I’ve seen have been amazing, and while I initially only wanted to do this challenge for two weeks, I can’t face the thought of letting go of how great I feel. Feel free to dip into my site – you don’t have to eat vegan at every meal and go crazy. Maybe you just want to cut down on some calories, or get a bit of energy back. Maybe you just feel like doing something different. However you use the site and the recipes is fine by me.
